Quick & Easy Instant Pot Pot Roast
Ingredients:
- 1 2.5-3 pound beef chuck roast
- 1 packet slow cooker Pot Roast Seasoning packet (found in seasoning aisle)
- 1 cup Beef Broth
- 2 teaspoons Onion Powder
- 2 teaspoons Garlic Powder
- Salt & Pepper (to taste)
- 1 Tablespoon olive oil
- Mushrooms (optional)
For Gravy
- 2 Tablespoons cornstarch
- 2 Tablespoons water
- juices from cooking
Directions:
Step 1: Set Instant Pot to Saute Mode and heat until it reads HOT. Meanwhile, mix onion powder, garlic powder, salt, pepper, and pot roast seasoning packet in small bowl. Set aside.
Step 2: Coat the bottom of the pot with the olive oil. Sear the meat in the Instant Pot by allowing it to cook on each side for 3-4 minutes undisturbed. While searing, slice mushrooms (if you're adding them) and set aside.
Step 3: Remove meat from pot and set aside. Pour in 1 cup beef broth to deglaze the pot. Make sure to use a wooden spoon to scrape all the bits stuck at the bottom (This is important to avoid getting the dreaded BURN sign from the Instant Pot)
Step 4: Return the meat to the Instant pot, then pour the seasoning mix evenly over the top. (If adding mushrooms, you can add them now sprinkled on top)
Step 5: Set for Pressure Cook time 60 minutes, put lid on and make sure valve is set to sealing.
Step 6: After timer goes off, quick pressure release until valve drops. This usually takes 2-3 minutes. Mix the 2 tbsp corn starch and 2 tbsp water together in small bowl while waiting.
Step 7: Carefully remove roast from instant pot and set on cutting board, slightly cool then slice against the grain. Set onto serving dish.
Step 8: Add the corn starch & water mix (known as a slurry) back to the pot with all the juices. Set instant pot to SAUTE function and bring to a simmer.
Step 9: Mix occasionally to keep from burning and heat gravy until desired thickness and consistency. Usually takes around 3-5 minutes. If it gets too thick, you can thin it out with additional beef broth or water.
Step 10: Pour gravy over the roast, or just on the side.
